Restaurateur Simon Dougan of catering company Yellow Door served up a gourmet meal last night in the Ulster Museum restaurant, now under his management.
I joined Simon and his wife Jilly for the evening to taste their most recent delights.
I took the opportunity to speak with Jilly, meat expert at Hannan Meats, who spoke of the critical importance of the traceability of meat from the farm gate to the plate.
